It’s prized for being one of the few non-fishy tasting fish, with its flat shape, subtle sweet taste and firm texture. It is relatively easy to cook and eat, with only a large bone structure and without the risk of choking on tiny fish bones. Steaming brings out the natural favours and simple too - ginger, garlic, fermented black beans, green onion, a little vegetable oil, salt and soy sauce.
